Pancakes - POPEYE STYLE!

Today has been relaxing. I woke up and caught up with my daily yoga and then spent the afternoon at the park. I did a 3 mile walk while reading my book club's book of the month Sacre Bleu. Then I relaxed by the water and tried to read up on some homework and some of Women's Health. I had all this great strength thanks to my wonderful breakfast!





I came across the recipe for these on one of my newly favorite blogs. I am learning to get into trying new things so I was actually excited to try these. I am a pancake fanatic sooooo why not mix my love for pancakes with my love for spinach?! I know I know, most people are going to think .... "Spinach pancakes - Ewwww" - at least that was one of my responses on Instagram but to my surprise and maybe many others if you chose to give these bad boys a try, they are quite good!

Popeye's Pancakes




Ingredients: 

1/2 Cup of Pancake Mix (I used what I had which was Log Cabin All Natural Pancake Mix)
1/3 Cup of Unsweetened Almond Milk (though I used Sweetened - it was what I had :-/)
1 tbsp of egg white
1 to 2 cups of leafy greens (i.e. Spinach but hmmm I wonder how Kale would work)
1/4 of a very ripe banana
Dash or 2 of cinnamon
Dash of vanilla extract 



Instructions: 

Blend all the ingredients together in a food processor or Magic Bullet.





Grease then hit a skillet and put it on medium to low heat. 

You want to cook them really slow with low heat. Don't rush them. Let them take their time. 

Pour 1/3 of the batter on the skillet. (Don't judge my pancakes circles)




Just as the bubbles begin to pop is when you can flip them! 

Enjoy! I did :-) . I kept it simple and just topped them with some light syrup and had the rest of the banana (from the 1/4) and two slices of turkey bacon on the side! Looking forward to this breakfast again in the future. 




Serving: For you and only you! I had enough for 3 nicely sized pancakes.
Calories: Mine was 306 calories. Calories would vary depending on pancake mix and sweetened and unsweetened almond milk!
