Frank Friday & Coconut flour pancakes!

Can I be quite frank with you all? Not that I'm usually anything less but I figured I can make Friday's a day where I just spill all my frustrations and etcetera from the week before refreshing and starting the weekend.

1) I am not feeling this two workouts a day thing. I honestly don't know if I'm going to continue with Insanity. Not if I want to run consistently as well. It's really just a lot. Honestly, to lose weight you don't have to workout twice a day. 30 mins to an hour of intense work is good enough to see progress!  Anywho, it's starting to put a toll on me wanting to even workout.

2) This week has kind of sucked. I didn't workout on Monday or Wednesday. Monday because I felt I should rest from the 10 miles & Wednesday because after trying to go for a run on Tuesday, I realized I needed to rest and ice a bit more. Then because of that I worked out even more harder on Tuesday (did 3 workouts) & thursday (Did 2.5 (.5 for Insanity ab workout) workouts). Thankfully I was able to do 5 miles this morning without problems!

3) This work week has been hell. Between working out I've been working 10hr+ days. Someone hand me a gun.

4) Because my knees were bothering me I decided not to do the race tomorrow. Ugh missing out on 2 medals.

Think that is all. Anywho, this morning I tried making some coconut pancakes. Taste wise they didn't taste bad but thanks to my pancake maker not being awesome like it use to be, I had to make them myself and though I am pancake obsessive, I suck at making pancakes on the stove top. Hence why I have a pancake maker. Now I must get a new one!

But yeah they were pretty decent. I made decent size pancakes and I made about 13 total. Would have made about 2 more but one of the pans I used wasn't non stick and well... yeah.

I got the idea for this recipe from The Informed Health Nut . Hers' is for waffles which is why it probably made way more pancakes. I changed some ingredients as well. I will continue to try to perfect this. But give it a try if you dare :)

Cinnamon Spice & Everything Nice 
Coconut flour Pancakes



Ingredients:

  • 4 whole organic eggs
  • 8 egg whites
  • 1/3 cup of unsweetened almond milk
  • 2 tsp of vanilla
  • 4 spoonfuls of unsweetened applesauce
  • half of a ripe banana, mashed
  • few shakes of cinnamon
  • few shakes of nutmeg
  • few shakes of ginger
  • few shakes of pumpkin spice
  • 1/4 tsp of salt
  • 1 tsp of baking soda
  • 1/2 cup of coconut flour
  • 2 tbsp of coconut oil, melted


Directions: 

In a large bowl add the eggs, egg whites, almond milk, vanilla, mashed banana, and applesauce. Mix together and set aside. Then in another bowl mix together the coconut flour, baking soda, cinnamon, nutmeg, ginger, pumpkin spice, and salt.  Add the dry ingredients to the wet ingredients mix a little bit and if you have a blender, mix ingredients in the blender to make a bit more smooth. Add the coconut oil in last.







Using a non stick pan or pancake maker, make the pancakes (this is where I suck). I put the stove on medium high. I did one pancake at a time which took time. For me the batter was not thick at all (I want to work on making it a bit thicker, any suggestions?) so I could only do one at a time. After about the 5th pancake, it got easier lol. I stopped and ate my breakfast and then continued :)! I made enough to eat two more times!



This recipe would also work great for my waffle eaters out there :)

I topped mine with light syrup and enjoyed. These are full of protein and fiber :)

Servings: Depends on the size of pancake / waffles.
Calories: Not sure, didn't add them up but I'm sure not much! I promise!
