Eating eggs in ways I never would have imagined.

I finished the workouts for week 2 of Livefit. Three days of rest is ahead. These past two weeks have been a breeze. When I'm lucky, the workouts take less than 40 minutes and I've been enjoying doing them because I've never really used machines at a gym. Next week begins five days of working out, as well as the folowing week. Phase two is when the fun really stops because my workouts will go to 6 days a week and I will be incorporating cardio back into my routines. Oh running I am coming back strong for you.

Look at those calves above.

I have been eating eggs so much the past 11 days. Every morning because of livefit, I have about 5 large egg whites. I have made omelets, scramble eggs, and egg white oatmeal pancakes so far.

This morning I had a yummy breakfast. I picked up some Udi’s Gluten Free Bagels yesterday from publix. So I made me a nice scramble egg sandwich with jelly. Jelly. Back in the day, never would I ever thought I'd be eating eggs with jelly. Maybe this is common but for me it's weird. I've always been such a picky eater and I don't like to mix certain things however I've been takings "risks" as I call them with my eggs. I have even made a peanut butter and jelly omelet. Sounds so crazy to me but taste so divine.

Favorite omelet?
Hard boil egg or scrambled?

  1. I like to hardboil the egg, and then just use the eggwhite...mash it up and make "egg-white salad" or hard boil - cut in 1/2 - remove yolk...spoon in salsa/or applesauce...very yummy
