Baking bread & reading books.

First things first. For all my movie lovers, if you love action movies that are hilarious GO SEE RED 2!!! Jay and I went to a pre screening of it on Monday night and it was SO GOOD! Like beginning to end. Honestly better than the 1st just like the previews say.  Even if you didn't see the 1st. I promise it's not necessary to see. All you need to know is that they are retired black ops agents. RED stands for "Retired, Extremely Dangerous". 



On Sunday I went to the Farmers Market and picked up a couple things. I am loving these cherries I got.

It's a party in my mouth. Yummy healthy protein bread!

Yesterday was such a beautiful day. Except for that one hiccup where I accidentally threw away $20 in the trash compactor. Not an actual bill but $20 worth of products. I had brought some natural yeast and Xylitol sweetener. I thought I had brought the wrong sweetener so I grabbed the bag on my way out the house along with the trash I also needed to take out. When I got to the dumpster, I just threw it all in. 10 minutes later I remembered I had it in my hand also and felt like - beep -. What makes it worst, I went back to buy the Xylitol only to find out it wasn't the wrong one so I had to re buy the same one. Yup. That was the hiccup. Other than that I had a beautiful Sunday.

Watched my church on line that morning. I woke up at 9, church starts at 9 soooo yeah. Heard a great word and that set up my day for awesomeness.


I cleaned up and thanks to a great conversation with Katherine at Real Food Runner, I used baking soda and vinegar to clean instead of my normal harsh killing my body chemicals. Baking soda has some awesome uses in case you aren't aware.

Ooh Ooh Yum Yum - Monkey Bread!!

OMG it has been such a busy week and currently I am going through one of those moments were I think I must have waited too long to eat because I KEEP eating. It's either that or the fact that it's that time of the month. You women out there know how it goes. No matter how strong you are doing that time, you will give in to things. At least I do and I try not to feel guilty about it! I'm really just trying to get to the place where I don't feel any guilt about anything I eat because I know that I eat healthy and well majority of the time and I workout hard! Shoot this week alone I've been doing two a days. That's two workouts a day for all you that don't know. I've been running and I've been doing insanity! I must be insane. Anyway quick over view of last weekend!

I came in 3rd in my age group at the 5K I did on Saturday!! Yayyy me!  Though they didn't give out awards to third place -_- just first place! Just my luck!


It was only 4 people in my age group but still I did awesome and I PR'd! For my non runners that means I beat my own personal record for 5K races! Prior to this one my personal best (in a 5K race) was 31:40! So this 28:27 felt so good!! We also got BLING(medals) for running! I run for the bling!




On Saturday I came home and decided I would treat myself! So I made some "healthy" monkey bread. Might not be totally healthy but I'm sure it's healthier than the real thing but taste just as amazing and with much less calories! They were soooo delicious! I ate two o_O on Saturday and Sunday lol and then one on Monday and the last one on Tuesday. I was so sad. These will be a staple once every few weeks snack! I am going to try to make it even healthier next time!!

So here it is! Enjoy the deliciousness :)

Sidenote: I actually did 3 of them with using truvia & the other 3 using light agave nectar! Both came out equally delicious. Though the agave ones were a little more high in calories!

Single Serve - Monkey Bread!


Ingredients:
1) 2 can of reduced fat crescent rolls
2) 1/2 cup of Sugar Free Maple Syrup
3) 1 tbsp Light Butter or Butter Spray (I used spray!)
4) 3 tbsp of ground cinnamon
5) 2 tbsp (4 packets) of truvia (or sweetener of choice that measures like sugar)



Directions:

Preheat the oven to 350 degrees. Spray a 12 cup muffin tin with non stick spray or use a on stick muffin tin!

Open up both cans of the crescent rolls and cut eat crescent triangle into 3 somewhat equal size pieces and then roll them into balls. Just eye ball them once rolled. Some will be a tad bit smaller or bigger than others. The balls shouldn't be toooo big though. Smaller than golf balls but large enough so that 4 of them can fit into each muffin tin nicely! You should have 24 balls per can so 48 total!



Now combine the truvia with just 2 tbsp of cinnamon in a small bowl. Toss the dough balls in the mixture (It's like cinnamon sugar!) until the balls are coated nicely! I put mine in tupperware (with a top over it) and then shook it! (This was harder with the agave nectar  & cinnamon mixture because it was a more wet mixture)

Next take your butter and melt it in a microwave safe bowl for about 30 seconds or until melted. Once the butter is melted, add the syrup and extra tbsp of cinnamon to the butter and stir. Set aside for a second.

Get your nicely rolled balls of dough and place four balls into each individual muffin tin. Next take the butter syrup mixture and pour mixture over each muffin tin until the balls are almost covered in the syrup mixture. There may not be enough in which you can whip up a little more or add a little more syrup to each tin!




Place into the heated oven and back for about 15 - 20 minutes or until a caramelized crust forms on the top of each little monkey bread delight!


Remove and let cool and then serve them up! Best when warm!!




Servings: 12 individuals scrumptious monkey breads! (I only made 6! Just divide the recipe in half!)
Calories: Can vary but mine were about 145 (truvia) and 165(agave nectar)
