Oh so Loco Lettuce Wraps!


So I've watched this years' Winter Olympics more then usual and really found out about sports I've never heard of like Skeleton! But any who, today is one of my favorite days because it's Women's Figure Skating! I LOVE watching figure skaters. So awesome, so beautiful, so athletic!

Speaking of athletes, what we(look at me referring to myself as an athlete!) put in our bodies is very important. We need food that is going to give us strength and energy and not weigh our bodies down. So you should know that when I was given an opportunity to try out some plant based burgers, I jumped on the opportunity.

A few weeks ago I was sent a lovely package in the mail from the great people at Sunshine Burger to try their plant based, gluten free, soy free, organic - and now I can honestly say awesome - meatless burgers! I wasn't expecting the grand package with so many options but happily tried a few of them! Don't worry will be trying the rest soon!

A little about Sunshine Burger:
All Sunshine Burgers are made with certified organic, verified Non-GMO whole food ingredients, free of gluten, soy, corn, canola, peanuts, tree nuts, dairy or eggs. Carol has a genius for taking simple ingredients and making them taste good. And each of her flavors really is nicely differentiated from the others, both taste and texture, by varying the use of beans, veggies and spice!




The burgers are already cooked and just require reheating so it a quick meal for the most part! And you can reheat them in so many different ways. Because I'm lazy - used the microwave to reheat mine!

I'm simple and picky eater so I kept my recipe simple. I made "Oh so Loco! Lettuce Wraps" and of course I wanted to share this recipe for What I Ate Wednesday!



What you need:
Romaine Lettuce Leafs
1 Loco Chipotle Sunshine Burger
Mozzarella cheese (optional)
Ketchup & Mustard (optional)

& then...
Take the lettuce leaves and spread them out.
Cut the burger into 4 or 5 slices


Stuff the burger onto the lettuce
Sprinkle cheese nicely over the lettuce wraps 
Drizzle with ketchup & mustard.
& ENJOY!

Feel free to add other goodies like jalepeno's and salsa! I sure will next time.

I've tried 3 flavors so far: Black Bean South West, Loco Chipotle and Falafel! All were yummy! I loved the spices of the Loco Chipotle the best because I'm a sucker for spicy foods!

Taste of Fall #4: Pumpkin Cookies!



I tend to enjoy the Fall season. The weather gets nice - usually make great beach days in Florida -, I start getting in the Holiday spirit, and for the most part when I think of Fall I start to also think of Food. I mean Fall does = Thanksgiving and the Holiday Season approaching in general. And the Holiday season is always full of good food. So I decided I wanted to do something special on my blog every Thursday during Fall. Taste of Fall! 

Every Thursday I plan on having other bloggers come over and Guest Post with Fall Inspired Recipes. Some may be healthy, some may not but I'm hoping they will all be yummy! With that said, let's get to our Guest post!

So Chrissy introduced herself here last week when she graced us with an awesome tomato and pumpkin soup! Make sure you check out her intro and the recipe!  Now on to the not so healthy but yummy cookies that you've been waiting for since last week!

As far as the unhealthy, here are my aunt’s pumpkin cookies.  I make these bad boys once a year, and while awesome standing tall on their own, I think the scarcity factor makes them even better.  Absence definitely makes the stomach grow fonder in this case.  They are sweet, cakey…everything a pumpkin cookie should be.

Not only to they taste good, but aren’t they pretty?!


Note: Do not skip the frosting. Or buy canned. It’s worth the time and effort to do these right.
Makes about 40 cookies

For the cookies:
1 cup butter
½ cup brown sugar
½ cup granulated sugar
1 cup canned pumpkin
1 egg
1 tsp. vanilla
2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
½ tsp. salt
1 cup walnuts or pecans, chopped
Whole pecans, to garnish
1 recipe penuche frosting (recipe below)

Directions
1. Preheat the oven to 350F.
2.  Cream butter and sugars together until light and fluffy.  Add the pumpkin, egg and vanilla.  Mix well.
3.  Add the dry ingredients and mix until just combined.  Stir in the nuts by hand.
4.  Drop by teaspoonfuls on baking sheet. I like to use two spoons together to form the cookies into ovals.
5.  Bake 10-12 minutes.
6.  Once the cookies and frosting are both cool, spread the top of each cookie with frosting, and garnish with a whole pecan.

Penuche Frosting
3 TB butter
½ cup brown sugar
¼ cup milk or cream
2 cups powered sugar, or more depending on your desired consistency

Directions
1. Combine the butter and brown sugar in saucepan.  Bring to boil, cook, and stir 1 minute.  Cool.
2.  Once cooled, add the milk and powdered sugar, and beat until the frosting reache spreading consistency.

Oh these sound so very yummy! May not be healthy healthy healthy but it's okay to treat yourself every once in a while during the holiday season, right?!

Power hour & Food trucks!


Hey hey!! I have a great workout - I mean of course it's great - that I found on Pinterest. I did it this past friday and it was definitely a POWER HOUR!! I know I've been treating you all like a step child but I hope to get more posts out this week especially an update on my Half Marathon training! That said make sure you stop by for a great recipe from my Taste of Fall post tomorrow!

So recently my apartment complex has started doing Foodtruck Tuesday's. So last night Jay and I headed down for some din din. I only was going because there was supposed to be a Grilled Cheese based food truck. Well see that supposed above meant that there wasn't and I was a lot tad bit upset. But I ended up still getting something from another food truck called Croutons.  I got the Steak Rice Bowl. It was good BUT could have used a little bit more seasoning on the steak. Other than that though yummy and I tried perogies for the first time which is like potato and cheese dumplings (on right in picture).

Taste of Fall #2: Phenomenal Pumpkin Chili


I tend to enjoy the Fall season. The weather gets nice - usually make great beach days in Florida -, I start getting in the Holiday spirit, and for the most part when I think of Fall I start to also think of Food. I mean Fall does = Thanksgiving and the Holiday Season approaching in general. And the Holiday season is always full of good food. So I decided I wanted to do something special on my blog every Thursday during Fall. Taste of Fall!

Hello! My name is Robin and I am 31 years old living in beautiful Denver Colorado and I have a confession- I do NOT like eating veggies. I wish I did, really. I could blame it on my mom, who managed a fast food restaurant my whole life, but in my heart I know it’s my own dang fault.
All that being said- last night I ate my veggies. They were in the form of chili, but normally I pick around the pieces I don’t want and leave the sad remnants of what could’ve been a nutritious meal in the bowl to feed to the disposal.
Not last night. I ate ALL of it. Twice.
So here you go, the best chili I have ever had (and like any good recipe, it was passed down from a friend who got it from another person who got it from someone else and so on….)
Seriously, so easy. Make it. Eat it. Love it.
Pumpkin Chili
1 lb ground turkey
1 lb hot Italian sausage (I used a sweet Italian sausage)
1 29 oz canned pumpkin
1 14 oz canned tomatoes with green chiles, drained
1 28 oz can crushed tomatoes
1 green pepper
1 yellow pepper (I doubled the green and skipped the yellow. Yellow is expensive.)
1 medium onion (I used a white one)
1 tbsp olive oil
3 cloves garlic
1 tbsp chili powder
salt/pepper to taste

Step 1: Saute garlic, peppers and onion in olive oil in large pot.


Step 2: Add both meats and cook until they brown. Add the salt and pepper to make it yummy.


Step 3: Add remaining ingredients, stir to incorporate, and simmer for 30 minutes.



So there you have it my friends.

Taste of Fall #1 : Crockpot Apple Butter

I tend to enjoy the Fall season. I mean Fall does = Thanksgiving and the Holiday Season approaching in general. And the Holiday season is always full of good food. So I decided I wanted to do something special on my blog every Thursday during Fall.

This recipe is from Angela over at Happy Fit Mama. It sounds really yummy! I've never had apple butter but I think I must put my crockpot to use very soon!


Crock Pot Apple Butter

8 apples cored and chopped
1 cup unsweetened Organic Apple Juice
cinnamon

1. Core and chop the apples.

2. Place apples in crock pot. Sprinkle with as much cinnamon as you want. (I like LOTS).

3. Set the crock pot to high for 4 hours.

4. After 4 hours, add the unsweetened apple juice. Stir.

5. Let apples cook for 4 hours. Stir every hour.

6. After 4 hours, apples should be browning. Pour the mixture into a food processor. Blend till smooth.



That's it! Really simple recipe. Angela says her and her family has been enjoying the warm Apple butter on toast and in oatmeal! Angela also has a yummy looking healthy pumpkin donut recipe on her blog so make sure you check that out as well!

I have a thing for Spicy Blackbean Burgers!

Last week I went on a "vacation". It wasn't a full vacation because I was still working but I was not at home and in other states and that kind of deems a vacation. I went to DMV area and had a good time and some really great eats. I didn't eat terribly but it wasn't totally healthy either. 



This was probably the best salmon I've had in a really long time. It was from Chili's and it was so so good. Highly recommend it if you're at Chili's and want a healthy delicious eat!

On a scale of 1 to 10, my healthy eating was a 7.

My eats over the last few days weren't the healthiest of the healthy I would say. But they weren't terrible either.  If I'm looking at it from a percentage perspective, I would say 75% of the time I ate healthy. Not my normal 80-85% but hey tis life. Enjoy food.




Friday was a very busy day and me and Jay ended up on an impromptu mini date where I beat his butt in pool.

I tend to throw every healthy thought out the window. It's bad. Then it always sucks getting back on track afterwards but I always do. So what did I eat & drink while on vacation in Atlantic City?? Some of everything! In my defense I did walk a lot. Didn't get in a run like I wanted though but ah well. Tis life.

I love me some froyo from Pinkberry. It's my favorite frozen yogurt spot.  Sunday I went on a little mini shopping spree for my upcoming mini vacay and while at the mall I just had to get me some Pinkberry. The flavors I got were original, cherry, and cookie n cream.  It was lovely.

I hope my wish comes true :)

I had a really good birthday! If I can ever help it I will never work on my birthday. It's a holiday. So I woke up and went to the gym. My birthday doesn't excuse me from a workout, besides working out doesn't stress me out it helps me start my day off better!



Then I came home and got cleaned up and put on a new maxi dress that was just waiting around in my closet to be worn. Completely had forgot about it. 




My smile says that my day was going in the right direction and I love my new lip color. It's Revlon's Just Bitten Kissable balm stain in Sweetheart Valentine.

Confessions of a snacker + get those abs tight!

Forgive me readers for I have sinned. Last night I ate rougly 30 pieces of mike n ike and 20 sour patch kids. (These are rough estimates from the eye balling I remember).  My sweet tooth got the best of me after dinner. The mike n ike I've been eating over the past 4 days. Sigh. I need to do better especially since I'm going to have one huge cupcake on Thursday! I have been justifying my candy eating with - "It's my birthday week. It's okay."

Flapjacked Banana Hazelnut Protein Pancakes review + WIAW

A quick WIAW before diving into the review.  
These are my favorite eats from the past few days.




I was in the mode for pancakes alot last week. I mean that's really nothing new.

Flapjacked Banana Hazelut Pancakes topped with cinnamon honey bananas & strawberries.

Egg white oatmeal pancake topped cinnamon honey bananas & strawberries.

While looking at apartments, picked up these goodies. Don't judge me.
It's national candy month.


I made some yummy chili. Simple ground turkey, dice tomatoes, black beans, and corn.

I love salads with fruit.


My favorite wings from Pollo Tropical.

In my defense, Pizza Hut had a deal. Large pizza for $5.55. Tell me you'll say no to that!

& I had to get some dessert. It was amazing. 
Vanilla soft serve ice cream with fresh strawberries and oreo crumbs.

They were out of my normal Mickie Mouse snack pack so I got this one. 

My dinner last night. Pineapple chile tilapia with mixed veggies.


Flapjacked Protein Pancakes - 
Banana Hazelnut  Review

Like I said in my first review of Flapjacked pancakes, I have a pancake addiction so I'm always on the look out for healthier pancake recipes. I purchased the 3 pack sample of the flapjacked protein pancakes and this is my 2nd review. The first one is on the Cinnamon Apple flavor. 


These are so very easy to make. You just add water, stir, and let sit for 3 - 5 mins to thicken. Then you make your pancakes. Says it makes between 6 - 8. I got 6 out of it. 


I made these and topped each pancake with cinnamon honey bananas and then on the very top I also added on strawberries. It was so amazing to me. No syrup was necessary at all.  Also this one has more protein then the Cinnamon Apple!



Yes I did try them sans anything and just like the Cinnamon Apple flavor, so good and moist. I ate three for breakfast, and the other 3 throughout the day for protein packed snacks!. Can't wait to try the last flavor which is  Buttermilk! Now I know some of you may be wondering, which of the two flavors I like the best. Well I'm sorry to say, my lips are sealed as I can't decide.

-I don't care for waffles. Weird I know. Or so people tell me it's weird.

Shopping at ikea is like returning to therapy.

 Happy Sunday! 

I had a great Saturday. A little bit of yoga, a little bit of love, a little bit of ice cream.. all so much fun. 


On Friday, I finished my last workout of Livefit Trainer Phase 1. 1 phase down, 2 more to go.



I worked my shoulders and abs hard on Friday too.

I mean it may had something to do with the fact that I knew I was having pizza last night. Yeah see Pizza hut had this deal. Large pizza for $5.55 to celebrate their anniversary. Now c'mon. I'm not saying no to that. So I planned a movie and pizza night for me and le boyfriend. It was great. I convinced him to watch Spirit of the Marathon with me. I hadn't heard about this movie until a couple weeks ago when someone told me about the 2nd one that premiered for one night only on Wednesday. I wasn't able to go but was told the 1st one was on Netflix. So I had to check it out. Can you say inspiring and awesome! I can't wait to cross that finish line one day and become a marathoner. Ahhh I can taste it.

It's always good to be able to get in a workout without needing any type of equipment. This can be done at home, at the gym, in the large bathroom stall at workout .... you know wherever. All you need is you!

Spinach Pizza Recipe + WIAW

Food makes me happy and I am glad that I now have a healthy relationship with it. 
So that I can enjoy it without overdoing it. 
Here are my favorite eats from the past few days. 

I had a phenomenal salad from Designers Green. It's this real exclusive salad and sandwich please. 
By exclusive I mean there are only 2 of them so yup, exclusive.


On Sunday I relaxed at the park and ate me some Italian Ice. So yummy and it has no fat, no high fructose corn syrup, and is only 15 calories per ounce. Can we saw awesome?!

Eating eggs in ways I never would have imagined.

I finished the workouts for week 2 of Livefit. Three days of rest is ahead. These past two weeks have been a breeze. When I'm lucky, the workouts take less than 40 minutes and I've been enjoying doing them because I've never really used machines at a gym. Next week begins five days of working out, as well as the folowing week. Phase two is when the fun really stops because my workouts will go to 6 days a week and I will be incorporating cardio back into my routines. Oh running I am coming back strong for you.

I have been eating eggs so much the past 11 days. Every morning because of livefit, I have about 5 large egg whites. I have made omelets, scramble eggs, and egg white oatmeal pancakes so far.
