Oh so Loco Lettuce Wraps!

So I've watched this years' Winter Olympics more then usual and really found out about sports I've never heard of like Skeleton! But any who, today is one of my favorite days because it's Women's Figure Skating! I LOVE watching figure skaters. So awesome, so beautiful, so athletic!

Speaking of athletes, what we(look at me referring to myself as an athlete!) put in our bodies is very important. We need food that is going to give us strength and energy and not weigh our bodies down. So you should know that when I was given an opportunity to try out some plant based burgers, I jumped on the opportunity.

A few weeks ago I was sent a lovely package in the mail from the great people at Sunshine Burger to try their plant based, gluten free, soy free, organic - and now I can honestly say awesome - meatless burgers! I wasn't expecting the grand package with so many options but happily tried a few of them! Don't worry will be trying the rest soon!

A little about Sunshine Burger:
All Sunshine Burgers are made with certified organic, verified Non-GMO whole food ingredients, free of gluten, soy, corn, canola, peanuts, tree nuts, dairy or eggs. Carol has a genius for taking simple ingredients and making them taste good. And each of her flavors really is nicely differentiated from the others, both taste and texture, by varying the use of beans, veggies and spice!

The burgers are already cooked and just require reheating so it a quick meal for the most part! And you can reheat them in so many different ways. Because I'm lazy - used the microwave to reheat mine!

I'm simple and picky eater so I kept my recipe simple. I made "Oh so Loco! Lettuce Wraps" and of course I wanted to share this recipe for What I Ate Wednesday!

What you need:
Romaine Lettuce Leafs
1 Loco Chipotle Sunshine Burger
Mozzarella cheese (optional)
Ketchup & Mustard (optional)

& then...
Take the lettuce leaves and spread them out.
Cut the burger into 4 or 5 slices

Stuff the burger onto the lettuce
Sprinkle cheese nicely over the lettuce wraps
Drizzle with ketchup & mustard.
& ENJOY!

Feel free to add other goodies like jalepeno's and salsa! I sure will next time.

I've tried 3 flavors so far: Black Bean South West, Loco Chipotle and Falafel! All were yummy! I loved the spices of the Loco Chipotle the best because I'm a sucker for spicy foods!

Anxious to try out some for yourself, find out if there is a Sunshine Burger near you! You wont be disappointed!

Disclaimer: I was not compensated for this post however Sunshine Burgers did provide me with free samples of the burgers so that I could do this post. All opinions are that of my own.

Swiss Oatmeal Recipe!

I've been getting back into the swing of things with my workouts. Doing the Blogilates January Calendar, plus running, plus squeezing in wii fit has been challenging but I'm making it work.

Treadmill workout on friday was crazy. I couldn't get through the whole thing.
I did the first portion ad last two portions but only did 1/2 of the second portion.
Next time I will do better!

Yesterday I worked out on my break. I almost died. This is me almost dying below. But I pushed through the workout. It was quite intense. I had to modify something but despite how much I wanted to stop, I kept going.

I really am loving to see my wii fit meter have high numbers. This is the highest ever in a day I have had so far. Of course this was when I did my 10 mile run on sunday :)

Because I'm doing this new body makeover challenge, I've been trying new foods and I must admit some have been quite a success while others have been a failure. I thought I'd link this awesome recipe up for What I Ate Wednesday! Here's my breakfast for this week thanks to Blogilates. Swiss oatmeal. This was my first time making overnight oats and it was so yummy!

Makes two servings.
1 cup of dry oats.
1 green apple, diced.
1/4 cup of dried cranberries
1 tbs of sliced almonds
1 cup of non fat plain greek yogurt.
Mixed ingredients.
Let chill in refrigerator overnight.
Enjoy in the morning.

*I squeezed half of a lemon over my diced green apple before adding it to the mixture. I wanted to make sure the apple didn't turn brown or get mushy. Not sure if it wouldn't have if I didn't do it though but I'm not taking that chance lol.
I'm loving this journey to becoming the woman that I want to be. The daily readings are great. I really loved this one. It won't happen overnight but it will happen. Something we must always remember!

.
.
.
Halfway through the week.
Hope you all have a great Wednesday!

Taste of Fall #4: Pumpkin Cookies!

I tend to enjoy the Fall season. The weather gets nice - usually make great beach days in Florida -, I start getting in the Holiday spirit, and for the most part when I think of Fall I start to also think of Food. I mean Fall does = Thanksgiving and the Holiday Season approaching in general. And the Holiday season is always full of good food. So I decided I wanted to do something special on my blog every Thursday during Fall. Taste of Fall!

Every Thursday I plan on having other bloggers come over and Guest Post with Fall Inspired Recipes. Some may be healthy, some may not but I'm hoping they will all be yummy! With that said, let's get to our Guest post!

...

So Chrissy introduced herself here last week when she graced us with an awesome tomato and pumpkin soup! Make sure you check out her intro and the recipe!  Now on to the not so healthy but yummy cookies that you've been waiting for since last week!
...

As far as the unhealthy, here are my aunt’s pumpkin cookies.  I make these bad boys once a year, and while awesome standing tall on their own, I think the scarcity factor makes them even better.  Absence definitely makes the stomach grow fonder in this case.  They are sweet, cakey…everything a pumpkin cookie should be.

Not only to they taste good, but aren’t they pretty?!

Note: Do not skip the frosting. Or buy canned. It’s worth the time and effort to do these right.
Makes about 40 cookies

For the cookies:
1 cup butter
½ cup brown sugar
½ cup granulated sugar
1 cup canned pumpkin
1 egg
1 tsp. vanilla
2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
½ tsp. salt
1 cup walnuts or pecans, chopped
Whole pecans, to garnish
1 recipe penuche frosting (recipe below)

Directions
1. Preheat the oven to 350F.
2.  Cream butter and sugars together until light and fluffy.  Add the pumpkin, egg and vanilla.  Mix well.
3.  Add the dry ingredients and mix until just combined.  Stir in the nuts by hand.
4.  Drop by teaspoonfuls on baking sheet. I like to use two spoons together to form the cookies into ovals.
5.  Bake 10-12 minutes.
6.  Once the cookies and frosting are both cool, spread the top of each cookie with frosting, and garnish with a whole pecan.

Penuche Frosting
3 TB butter
½ cup brown sugar
¼ cup milk or cream
2 cups powered sugar, or more depending on your desired consistency

Directions
1. Combine the butter and brown sugar in saucepan.  Bring to boil, cook, and stir 1 minute.  Cool.
2.  Once cooled, add the milk and powdered sugar, and beat until the frosting reache spreading consistency.

...

Oh these sound so very yummy! May not be healthy healthy healthy but it's okay to treat yourself every once in a while during the holiday season, right?!

Taste of Fall #3: Tomato & Pumpkin soup & Pumpkin Cookies!

I mean Fall does = Thanksgiving and the Holiday Season approaching in general. And the Holiday season is always full of good food. ...

Hi Everyone. I’m extremely honored and excited to be guest posting for Precious in her fall recipe roundup!

A little about me: During the day, I’m an attorney living in Chicago. When I’m not lawyering, I climb mountains, hop the globe, rap to Eminem, dance to Britney, excel at baking cupcakes, and wear short skirts with wool tights. In other words, I’m a fancy bad-ass. J  Because I’m single and found myself talking to myself too much, I started TWO blogs in the past year. One is my ongoing “life project,” if you will, a work-in-progress-culinary-trek-around-the-globe. If your taste buds like to explore, check out all the random, weird and mostly delicious international tastes at The Hungary Buddha Eats the World.  For everything else that pops into my head, you can find my rambles at The Hungary Buddha Busts a Move.

Now, onto the food.  That’s why I’m here, after all.

There are few things I enjoy more than cooking…and eating. Luckily, they go hand in hand. I can confidently say that my favorite weekend days are spent in my tiny walk up kitchen, and any given Saturday or Sunday you’ll find me whipping up a week’s worth of dishes, my favorite pop station blaring in the background.  Well, pop or Michael Buble, depending on the time of day. Yes, I like Michael Buble. No, I’m not 60 years old. I accept this.  You should, too.

Today I’m sharing two of my favorite fall recipes. One healthy. One, not so much.

First, the healthy:

A tomato and pumpkin soup.

I came across this non-traditional tomato soup of sorts in my culinary travels when I “cooked” Africa.  It’s creamy without cream and thanks to some jalapenos; it has some kick to it.   I found that it’s best to make this a day in advance to let the flavors meld. The first bowl was underwhelming. However, the second was phenomenal and I found myself extremely sad when I finished this pot o’soup.  It’s also vegetarian if you use vegetable rather than chicken stock.

Olive oil for the pan
1 onion, diced
2 jalapenos, diced
1 can crushed tomatoes
1 can canned pumpkin
1 TB honey
½ tsp nutmeg
½ tsp dried thyme
5 cups chicken or vegetable stock
1 can cannelloni beans
Parsley, finely chopped to garnish
Goat cheese, to taste
Salt and pepper

 Directions
1.   Heat some oil in the bottom of the stock pot, enough to coat. Add the onions and jalapenos and sauté until soft.  Add the spices and cook another two minutes.

2.  Add the honey, tomatoes, pumpkin and stock.  Simmer about 10 minutes.

3.  With an immersion blender, puree until smooth.  Add the beans and boil for about 5 minutes.

4.  When you are ready to serve, add goat cheese and parsley to each bowl.

As far as the unhealthy, here are my aunt’s pumpkin cookies.  I make these bad boys once a year, and while awesome standing tall on their own, I think the scarcity factor makes them even better.  Absence definitely makes the stomach grow fonder in this case.  They are sweet, cakey…everything a pumpkin cookie should be.
...

Now that your mouth as probably watering for the ingredients to these cookies I thought I'd make you all wait until next week. Come back next week to get Chrissy's Pumpkin Cookie recipe!!

Taste of Fall #2: Phenomenal Pumpkin Chili

I tend to enjoy the Fall season. The weather gets nice - usually make great beach days in Florida -, I start getting in the Holiday spirit, and for the most part when I think of Fall I start to also think of Food. I mean Fall does = Thanksgiving and the Holiday Season approaching in general. And the Holiday season is always full of good food. ...

Hello! My name is Robin and I am 31 years old living in beautiful Denver Colorado and I have a confession- I do NOT like eating veggies. I wish I did, really. I could blame it on my mom, who managed a fast food restaurant my whole life, but in my heart I know it’s my own dang fault.
All that being said- last night I ate my veggies. They were in the form of chili, but normally I pick around the pieces I don’t want and leave the sad remnants of what could’ve been a nutritious meal in the bowl to feed to the disposal.
Not last night. I ate ALL of it. Twice.
So here you go, the best chili I have ever had (and like any good recipe, it was passed down from a friend who got it from another person who got it from someone else and so on….)
Seriously, so easy. Make it. Eat it. Love it.
Pumpkin Chili
1 lb ground turkey
1 lb hot Italian sausage (I used a sweet Italian sausage)
1 29 oz canned pumpkin
1 14 oz canned tomatoes with green chiles, drained
1 28 oz can crushed tomatoes
1 green pepper
1 yellow pepper (I doubled the green and skipped the yellow. Yellow is expensive.)
1 medium onion (I used a white one)
1 tbsp olive oil
3 cloves garlic
1 tbsp chili powder
salt/pepper to taste

Step 1: Saute garlic, peppers and onion in olive oil in large pot.

Step 2: Add both meats and cook until they brown. Add the salt and pepper to make it yummy.

Step 3: Add remaining ingredients, stir to incorporate, and simmer for 30 minutes.

So there you have it my friends.
The day Robin ate her vegetables, brought to you by her friends from Nerd Fitness.
and on Twitter @foreverlovewins

...
Thanks for sharing Robin!! This seems so simple and easy to make! I've never had chili with italian sausage so can't wait to try it!! Make sure you all visit Robin on her blog as well and show her some love!

Taste of Fall #1 : Crockpot Apple Butter

I tend to enjoy the Fall season. The weather gets nice - usually make great beach days in Florida -, I start getting in the Holiday spirit, and for the most part when I think of Fall I start to also think of Food. I mean Fall does = Thanksgiving and the Holiday Season approaching in general. And the Holiday season is always full of good food. Every Thursday I plan on having other bloggers come over and Guest Post with Fall Inspired Recipes. Some may be healthy, some may not but I'm hoping they will all be yummy! With that said, let's get to our first post of the season!

This recipe is from Angela over at Happy Fit Mama. It sounds really yummy! I've never had apple butter but I think I must put my crockpot to use very soon!

Crock Pot Apple Butter

8 apples cored and chopped
1 cup unsweetened Organic Apple Juice
cinnamon

1. Core and chop the apples.

2. Place apples in crock pot. Sprinkle with as much cinnamon as you want. (I like LOTS).

3. Set the crock pot to high for 4 hours.

4. After 4 hours, add the unsweetened apple juice. Stir.

5. Let apples cook for 4 hours. Stir every hour.

6. After 4 hours, apples should be browning. Pour the mixture into a food processor. Blend till smooth.

That's it! Really simple recipe. Angela says her and her family has been enjoying the warm Apple butter on toast and in oatmeal! Angela also has a yummy looking healthy pumpkin donut recipe on her blog so make sure you check that out as well!

Banana Berry Crepes!

Good morning!

Spinach Pizza Recipe + WIAW

Food makes me happy and I am glad that I now have a healthy relationship with it.
So that I can enjoy it without overdoing it.
Here are my favorite eats from the past few days.

I had a phenomenal salad from Designers Green. It's this real exclusive salad and sandwich please.
By exclusive I mean there are only 2 of them so yup, exclusive.

On Sunday I relaxed at the park and ate me some Italian Ice. So yummy and it has no fat, no high fructose corn syrup, and is only 15 calories per ounce. Can we saw awesome?!

Tuesday, May 28, 2013

Apparently I'm a danger to myself.

I am learning that I need more recipes. I keep eating the same things over and over again. I can be so lazy but I want new healthier eats. Eating the same ol, same ol makes me have unhealthy cravings like for I don't know - french fries or something gooey like a cupcake. Then I will really feel like a busted can of biscuits.

I am also too lazy to go to the grocery store because honestly I kind of sort hate grocery shopping. I really wish I could get it delivered. It would be so much more easier on my wonderful life. So yeah being lazy meant I had to really think about what I wanted to eat for dinner because I'm pretty much low on things that make me saw ohhhh. But long and behold I decided on a stirfry. I had some zucchini, squash, and okra in the fridge and then remembered I also brought one white potato the other day just to have.

So I whipped up this goodness.

Egg white oatmeal pancakes! Simple and yummy!

My chair massage today gave me life. The focus was on my neck. Lately my neck has been bothering me and it's probably because I stare at a computer screen 90% of my waking hours. Blasphemy.

After my massage, I used my hour lunch break to go to the gym and knock out my final workout of the week. Livefit week 1 pretty much complete on the workout tip. Still have to continue to eat healthy and I plan on having active rest days. By active I mean not laying on the couch stuffing my face 24/7.

Tomorrow and saturday I think I am going to do yoga and flexibility stretches. I really want to do a split one day. Like really. It's a goal.

Banana Mango Melon Green Smoothie

This afternoon I got into a mini funk.
I went to Starbucks and got my beloved Skinny Cinnamon Dolce Frap
& warm butter croissant and all was better.
That's all it took.

So Today's Green Smoothie was ALMOST a fail.
So here's how it went. Play by play.
My first ingredients were: Avocado, cantaloupe, kiwi, spinach, water and ice.
Blend well.
Taste.
Oh my gawd this is awful.
I wonder if I add a little bit of a protein milk drink.
Just a splash.
Blend.
Ewww still terrible.
Open freezer.
Oh wait, I wanted to add frozen mango.
Add in some mango.
Blend again.

Quick Meal Monday! - Loaded SWEET Potato.

Happy Monday!
Here's a quick meal!
Well it's quick if you have all the items on hand. :)
I tend to keep homemade turkey burgers in my freezer.
Remember prepping is important! Very!
I make about 10 - 12 at a time and freeze them for meals like this!
Turkey burgers can be used as a burger or chopped up and used in a variety of ways such as this!

All you need is: Small to medium sized sweet potato, 2 - 4oz of lean ground turkey (or extra lean beef if you prefer), natural salsa, natural green salsa, and non fat or low fat plain greek yogurt!

First thing first, "brown" the ground turkey unless you're like me and have it already on hand. If so just cut it up in tiny pieces.

Bake the sweet potato in the microwave for 10 minutes. Place it in a microwave safe bowl, cover with a paper towel, and let it cook. Turn it over halfway through. You can also bake the sweet potato in the oven but that will take about 45mins to an hour and this is a QUICK meal!

Let the baked sweet potato cool for a minute or two and then cut the potato down the middle. DO NOT SLICE IT IN HALF. Basically cut a slit in the middle so that you can open the potato enough to stuff it!

Add in a couple spoonfuls of red salsa, then ground turkey, more red salsa, green salsa, then top with lowfat yogurt.

*** Depending on how much ground turkey you have, it will not all fit. It also depends on the size of your potato. I usually load up my potato. Eat some and reload. :). It is so delicious. ***

Eat this all by itself or add in some avocado slices on the side! Or even inside your loaded potato!

If you have all items with the meat already cooked - this takes no more than 15 mins!
Quick and healthy! Nothing beats that!

Enjoy!
Let me know if you try it!

Quick & Easy Stir Fry!

Thursday was a pretty good day.  Worked out in the morning doing Insanity that I was suppose to do Wednesday but didn't. Kind of like two workouts because it was pure cardio and then cardio abs. After the workouts I had me a nice green smoothie. Then later that day I learned I need to start using more variety in my smoothies. Switching up by using different greens and even different fruits. If you are a green smoothie drinker, read more here!

I've started adding applesauce to my smoothies. Just something to share.

Later that evening I was suppose to do Thursday's Insanity workout but decided against it. I did go out for a walk with my running group. I decided to walk instead of run because I didn't want to irritate my knee. It ended up being a nice 2 mile walk!

On my way home, stopped by Publix to get some zucchini's for dinner and ended up getting broccoli (normally $2.50 & on sale for $1 - STEAL!) and just my luck they were giving out sushi samples (yummy!) andddd I brought me a powerball ticket and also got a fantasy five ticket for the free! Someone left their ticket. Finders Keepers! I haven't checked but I could be a typing millionaire right now!

I had decided before I left for my walk that I wanted to try making zucchini noodles with my new mandolin slicer and then adding it into a chicken and veggie stir fry. I already had chicken (made about 5 chicken breast the other day to use the rest of this week) so I took out my lovely wok and went to work. Nevertheless it was yummy. Here is the recipe for those who care!

Quick & Easy Stir Fry

Ingredients

8 oz of grilled chicken breast or tenderloins
1 large zucchini
2-4 cups of broccoli
1-2 cups of frozen mixed vegetables
1 - 2 tbsp of barbecue sauce
1 - 2 tbsp of soy sauce
Chinese stir fry seasoning or seasoned the way you want :)
Coconut oil (or oil of choice - spray works fine as well)

Directions

First grill the chicken breast, cut into small pieces, and set aside.

Using a mandolin or julienne slicer, slice the zucchini into thin noodle like slices.

Likely grease your Wok (other pans such as a frying pan would work as well) with the oil and heat up on stove top on medium to high heat. Add in zucchini, broccoli, and mixed vegetables. Feel free to add in other vegetables but these are what I had on hand! Season vegetables with seasoning as well as add in half of barbecue sauce and half soy sauce. Stir.

Let vegetables cook stirring occasionally.

After vegetables start to soften a bit add in the chicken, the rest of the soy sauce and barbecue sauce. Let cook until vegetables are as tender as you like them to be. Enjoy!

Servings: 2!
Calories: Varies about 200 - 300 a serving!

Lasagna SANS Pasta!!!

I now have a friend who is finger tip less thanks to this lovely recipe. Please use caution and follow all directions when using a mandolin. We had to learn that the hard way when my friend sliced off a small piece of her pinky fingertip skin. It's okay to laugh. She lived and we still ate well.

This was my first VERY first time making Lasagna and I decided to make it sans pasta. Instead of pasta, Zucchini was used. Making it less in carbs and giving you more vegetables yet tasting just as amazing! I promise you won't even realize there aren't any noodles!

Zucchini Lasagna

Things needed:
9 x 13 casserole baking dish
Mandolin slicer to slice the zucchini

Ingredients:

  • 1 lb 93% lean beef or extra lean ground turkey (I used ground turkey!)

  • 3 cloves garlic diced

  • 1/2 onion diced (used a sweet/yellow onion)

  • 1 tsp olive oil

  • salt and pepper (I also added in red pepper flakes for a little spiciness!)

  • 28 oz can crushed tomatoes

  • 2 tbsp chopped fresh basil

  • 3 medium zucchini, sliced 1/8" thick

  • 15 oz part-skim ricotta

  • 16 oz part-skin mozzarella cheese, shredded

  • 1/4 cup Parmigiano Reggiano (I found this at Wholefoods but could be other places. Basically parmasan cheese!)

  • 1 large egg

  • Directions:

Using a mandolin slice up the zucchini into thin slices. If you're anything like me and this is your first time using a mandolin they may not all come out looking amazing but don't worry they don't have to be perfect! Once done, sprinkle with salt and set aside. The salt will cause a lot of the moisture inside of the zucchini to come out.

Next, season the meat with salt and pepper and then brown/cook the meat. When cooked drain in a colander to remove any excess fat. Add olive oil to the pan and saute garlic and onions about 2 minutes. Return the meat to the pan, add canned tomatoes, basil, salt and pepper. Simmer on low for at least 30-40minutes, covered. Do not add extra water, the sauce should be thick.

While that is simmering, blot of the excess water that has appeared on the zucchini and then grill them. 1 to 2 mins per side. I used my George Forman grill but you can probably use a pan or an actual grill if you have one.

Preheat the oven to 375 degrees

In a medium bowl mix ricotta cheese, parmesan cheese and egg. Stir well.

In a 9x13 casserole spread some sauce on the bottom and layer the zucchini to cover. Then place some of the ricotta cheese mixture, then top with the mozzarella cheese and repeat the process until all your ingredients are used up. Top with sauce and mozzarella and cover with foil. I had about 3 rows of sauce, 2 rows of zucchini, 2 rows of ricotta, and 3 rows of mozzarella.

Bake 45 minutes covered at 375°, then uncovered 15 minutes. Let stand about 5 - 10 minutes before serving. Then enjoy!!!

    Servings: 8 yummy ones!
Calories: 345 calories per serving according to Skinny Taste!
This recipe is compliments of Skinny Taste
