Spinach Pizza Recipe + WIAW

Food makes me happy and I am glad that I now have a healthy relationship with it. 
So that I can enjoy it without overdoing it. 
Here are my favorite eats from the past few days. 

I had a phenomenal salad from Designers Green. It's this real exclusive salad and sandwich please. 
By exclusive I mean there are only 2 of them so yup, exclusive.


On Sunday I relaxed at the park and ate me some Italian Ice. So yummy and it has no fat, no high fructose corn syrup, and is only 15 calories per ounce. Can we saw awesome?!

Oh my GREENness :)

So today is the beginning of the Green Smoothie challenge hosted by 
Katherine at Real Food Runner 
(along with some other awesome bloggers that I would love to name but I'm being so lazy today)

So last night I already had decided on what I was going to have for breakfast.
A green smoothie why of course.
But for me, I have learned that a smoothie is just not enough fuel for me.
Not if I expect to stay full for a few hours at least.
So I also had an omelet.
I tried something different that I saw on Monica's blog (Run Eat Repeat)
It's basically a PB&J&B omelet.
Peanut butter (well in my case almond butter), Jelly, and Banana Omelet.
It was delicious.

Challenge ACCEPTED!

How do you like your smoothies?
I like mine GREEN.
So why wouldn't I hop on the opportunity to be apart of a green smoothie challenge?

So Katherine at Real Food Runner, one of the blogs I stalk follow,  is hosting a Green Smoothie Challenge along with some other awesome sauce bloggers. 



If you aren't a green smoothie drinker, here is your chance.
Last year around this time I had no clue what a green smoothie was 
and now I am so happy I discovered them.
Great for anytime of the day if you ask me.
& there are so many variations from really simple ingredients to getting really creative
 and just throwing stuff into your blender and hoping for the best.
At least that's what I do sometimes now and so far, so good.


Come on this challenge is easy peasy.

Spinach Protein Frittata Bowl


I found that I eat spinach just about every day! It has such great health benefits and with the fact that I drink Green Smoothies often, I have become accustomed to having Spinach for breakfast. Makes it easy to get in my daily dose of veggies! This a staple breakfast for me and thought I'd share. Simple ingredients, low calorie, great amount of protein, and takes about 20 - 30 minutes to bake.


Spinach Protein Frittata Bowl



Ingredients:

1 to 2 cups of Spinach
1 to 2 slices of turkey bacon or 1 - 2 turkey sausage links
2 egg whites (about 6 tbsp) or 1 whole egg and 1 egg white !
Salt & Pepper, to taste

Directions:

Preheat oven to 350.

Cook the sausage or bacon.

While that is cooking, cook the spinach lightly and then mix into a bowl with the egg. Season with salt and pepper.

Once meat is done, chop it up into small pieces and then add it with the spinach and egg mixture. Mix that together and the pour it into a small baking bowl. You may lightly grease the bowl.




Put into the oven and bake for about 10 minutes. After about 10 minutes, turn on the broiler.

Let the oven broiler cook the top of your frittata bowl. In about 5 - 10 minutes the top should have turned a golden brown. It will rise some. You can turn off the broiler and put the oven back on 350 and let it cook about 5-10 minutes.

Take the bowl out of the oven and let it sit for a couple minutes. The top will deflate a bit. Enjoy! I usually have this with a side of some grapefruit or whatever fruit available!



Serving: It's your own little bowl! No sharing!
Calories: At most roughly 200. That is based on 2 turkey sausage, 1 whole egg, 1 egg white, and 2 cups of spinach.
Tip: When I use 2 egg whites I add a little water to the mix.



I'm pretty simple but don't be afraid to add other things like onions and tomatoes into the frittata. I'm going to add cheese to my next one!

Pancakes - POPEYE STYLE!

Today has been relaxing. I woke up and caught up with my daily yoga and then spent the afternoon at the park. I did a 3 mile walk while reading my book club's book of the month Sacre Bleu. Then I relaxed by the water and tried to read up on some homework and some of Women's Health. I had all this great strength thanks to my wonderful breakfast!





I came across the recipe for these on one of my newly favorite blogs. I am learning to get into trying new things so I was actually excited to try these. I am a pancake fanatic sooooo why not mix my love for pancakes with my love for spinach?! I know I know, most people are going to think .... "Spinach pancakes - Ewwww" - at least that was one of my responses on Instagram but to my surprise and maybe many others if you chose to give these bad boys a try, they are quite good!

Popeye's Pancakes




Ingredients: 

1/2 Cup of Pancake Mix (I used what I had which was Log Cabin All Natural Pancake Mix)
1/3 Cup of Unsweetened Almond Milk (though I used Sweetened - it was what I had :-/)
1 tbsp of egg white
1 to 2 cups of leafy greens (i.e. Spinach but hmmm I wonder how Kale would work)
1/4 of a very ripe banana
Dash or 2 of cinnamon
Dash of vanilla extract 



Instructions: 

Blend all the ingredients together in a food processor or Magic Bullet.





Grease then hit a skillet and put it on medium to low heat. 

You want to cook them really slow with low heat. Don't rush them. Let them take their time. 

Pour 1/3 of the batter on the skillet. (Don't judge my pancakes circles)




Just as the bubbles begin to pop is when you can flip them! 

Enjoy! I did :-) . I kept it simple and just topped them with some light syrup and had the rest of the banana (from the 1/4) and two slices of turkey bacon on the side! Looking forward to this breakfast again in the future. 




Serving: For you and only you! I had enough for 3 nicely sized pancakes.
Calories: Mine was 306 calories. Calories would vary depending on pancake mix and sweetened and unsweetened almond milk!

Who's idea was this again?!

I'm not turning into the Hulk yet. 

So here is where I will be keeping all my updates regarding my Green Smoothie Detox challenge.  So keep checking back.

Monday March 4th
10:46am - I am hungry. I want to eat something. This is not the business. Ugh how am I going to make it until my next one at 12:30. Who's idea was this again?

11:42am - 45 more minutes before my next smoothie. Thank goodness. Thinking about going to run a mile on my break and then it'll be smoothie time. I can do this.

12:30pm - Well what do you know it's 12:30 and I am not RUNNING to get my next smoothie. Crazy. About 12 o'clock I wasn't as focused on the time anymore. See the tricks your mine plays. When it's so far away, you feel like you're coming to die. Now that it's time for another I'm just like whatever. I'll get it in a minute.

1:08pm - Just having my second smoothie. Lookie there a hold 38 mins later than planned. It's so yummy!!

4:16pm - Just finished smoothie number three!! The last 3 hours were a breeze. I am trying to decide if I'm going to have one or two more smoothies. I think just one and then an apple for my "late night snack" because I go to sleep around 10:30 on Monday's. Yeah like an old person. Don't judge me.

8:19pm - Waiting until 9 to have my final smoothie. I ate an apple (pre workout snack) that I ate after my workout & also an orange (I need the vitamin C because this Florida weather has made me sick -_-) but I don't consider that falling off the detox wagon. These are things I would put in smoothies! :)

11:00pm - *Yawn* I am beat. It is high time for me to get some sleep. I usually wake up at 5:30 on Tuesday mornings to go running with my running group but it's suppose to be in the 30s & I already got the sniffles so I will stay cuddled up in my bed until it's time for me to get up for work. In other news - on the subject lol - I made it through day 1 of my green smoothie detox! I feel like it was a success. This morning I was not sure how I was going to make it but after 11:30 it was a breeze. Hopefully tomorrow isn't bad. I need to leave all my money at home so I can't buy anything at work!

Tuesday March 5th

11:28am - My tummy is growling. Marvis as I like to call him. Yes my tummy has a name. Long story. Don't judge me. I have some water I'm about to guzzle. It should hold me for the next hour!

2:41pm - I'm getting a headache. Uh oh. My next smoothie is in less than an hour. I don't know if my lack of feeling well is due to lack of food or just me being slightly under the weather.

7:52pm - Sooooo I fell off the wagon for a second. I had some almonds. Oopsy. Waiting until 8:30/9 to have my last smoothie of the night. Somewhere between pretty little liars and dance moms.



Wednesday March 6th

5:22pm - I'm so over this. lol. I want some meat. Some real protein. Let's be real. I did deviate. I ate some almonds and raisins. Not too bad but still not what I was suppose to eat. Anywho that's neither here nor there.  Ugh. Tomorrow can't come soon enough.  Welp it's time for my third smoothie.

9:46pm - I'm not that hungry to have another smoothie. So I think I'm just going to eat a banana and then go night night. This challenge has been great. Sad to see it go. Not.

I just might turn into The HULK!

Or a green monsta! 
As you all know, I'm participating in the Great 48 Instagram weight loss challenge. To really jump start this challenge I decided that I'm going to do a 2 or 3 day detox type challenge. I am going to - waiiiit for it  - drink only green smoothies for the next two possibly three days. I want to do 3 days but I might not make it. LOL! We shall see if the willpower persists! 

Why you may ask? Well why not! I love green smoothies. Great meal replacements as well as a great snack so why not have it for both! I plan on drinking 5 green smoothies a day. Breakfast. Snack. Lunch. Snack. Dinner. No snack. Oh and I will have an apple for my pre workout snack. 

Okay okay okay I know some of you are like what in the world is a green smoothie! Well my little grasshoppers it is something I never knew about until last year! It's a smoothie with fruit and leafy greens (usually spinach or kale). I use Spinach in mine normally and when I feel like living on the edge I'll throw in some Kale. Kale is a different acquired taste for me. That I haven't acquired yet.  My normal green smoothie recipe is a very simple one: About a cup of water, some ice, lots of spinach (2 - 4 handfuls - start small until you get use to the taste), a cup of frozen strawberries, and a small frozen banana. Your fruit doesn't have to be frozen but I prefer it that way so it can be nice and chilled and kind of thick! Sometimes like in the picture below I add in other fruit like blueberries or frozen mango chunks as well as some protein powder! With my challenge I will add protein powder to one of the smoothies every day!



Now when you're detoxing you're not usually as energized as you can be so I don't know how my first few days of Insanity (yes I start that tomorrow!) will go! But come Thursday I hope to be like the Hulk or at least a green energizer bunny!
